🍂 Vegan Pumpkin Spice Latte

Ingredients (1 serving):

  • 1 cup strong brewed coffee or 1 shot espresso

  • 1 cup unsweetened oat milk (or almond milk)

  • 2 tbsp pumpkin purée

  • 1–2 tbsp maple syrup (adjust to taste)

  • ½ tsp pumpkin pie spice (plus a pinch for garnish)

  • ¼ tsp vanilla extract

  • 2 tbsp vegan cream (such as coconut or cashew cream)

Instructions:

  1. Warm the pumpkin base: In a small saucepan over medium heat, whisk together pumpkin purée, pumpkin spice, and maple syrup for about 1 minute, until fragrant.

  2. Add liquids: Slowly stir in the oat milk and vanilla. Heat until steaming but not boiling.

  3. Blend for creaminess: Use a hand frother or whisk to create a light foam.

  4. Combine: Pour the hot coffee or espresso into a mug. Add the pumpkin mixture, then stir in vegan cream.

  5. Finish: Top with a sprinkle of pumpkin spice and enjoy the cozy vibes!
